Gluten Free Cranberry Orange Pecan Pumpkin Bread
Ingredients
- 1 1/3 cups of Arrowhead Mills Gluten Free All Purpose Baking Mix
- 1 cup orange juice
- 1 ½ cups pumpkin purée
- ½ cup fresh cranberries chopped
- ½ cup toasted pecans coarsely chopped
- 2 eggs
- 1/3 cup of canola oil
Directions
- Pre-heat oven at 350º
- Grease a 9x5 inch loaf pan
- Mix all ingredients together in a medium size bowl and blend well.
- Transfer batter to prepared loaf pan and bake in the center of the oven for 50-55 minutes or until tester comes out clean. Cool in pan for 10 minutes and turn out onto rack to cool completely before slicing.
